Chef keeps JourneyCare patients and families refreshed with chilled watermelon gazpacho

The idea of comfort food takes on a very real meaning for Chef David Warner. He cooks for patients and families at JourneyCare’s Marshak Family CareCenter in Glenview, working to help them feel a little more at home and make the most of each day together.

Chef David is passionate about cooking with fresh ingredients and creating special dishes at the request of patients and their families. With hot days arriving, Chef David says, watermelon gazpacho is a cooling dish for summer. He combines cucumber and watermelon to put a refreshing twist to the classic soup, especially for patients and families spending time outdoors in JourneyCare’s Waud Family Healing Garden.

Fresh Watermelon Gazpacho Recipe


Serves 4

4 cups cubed watermelon, seeded, divided

2 tablespoons lime juice

1 tablespoon grated lime zest

1 teaspoon minced fresh ginger

1 teaspoon salt

1 cup chopped tomato

1/2 cup chopped cucumber



1/4 cup minced fresh cilantro

2 tablespoons chopped green onion

1 tablespoon finely chopped seeded jalapeno pepper

What to do:

Puree 3 cups watermelon in a blender. Cut remaining watermelon into 1/2-inch pieces; set aside.

In a large bowl, combine the watermelon puree, lime juice, lime zest, ginger and salt.

Stir in the tomato, cucumber, cilantro, onion, jalapeno and cubed watermelon.

Chill until serving.
