Grandma’s comfort-inspired Italian chicken casserole

It’s not a cure, but Grandma Iaia’s chicken casserole is packed with traditionally comforting flavors and nutritious ingredients. Volunteer Patrick Curtin says the recipe, created by his spouse’s grandma, promises to inspire happy feelings. “The dish connects me with her nurturing spirit,” he says.


Italian Grandmother’s Baked Chicken Recipe

Ingredients

  • 3-4 small red potatoes
  • 2 bags of carrots
  • Garlic
  • Kosher salt
  • Fresh ground pepper
  • 4 ½ – 5 chicken legs and thighs
  • Grated Italian cheese
  • Fresh Italian flat-leaf parsley
  • Fresh rosemary
  • Olive oil

Preparation (about 90 minutes)

  • Preheat oven to 375°
  • Cut potatoes into fourths or halves
  • Slice carrots into 2” sticks
  • Sprinkle 3 cloves of garlic, Kosher salt and pepper over vegetables
  • Slice enough garlic to place in chicken
  • Insert garlic in chicken and place rosemary under skin
  • Salt (Kosher) and pepper chicken
  • Chop parsley and sprinkle over chicken—avoid clumps
  • Drizzle olive oil
  • Sprinkle grated cheese over chicken—avoid clumps
  • Pour boiling water ¼ to ½ inch deep in baking pan
  • Bake about 1 hour and 40 minutes. Check to ensure lack of pinkness.
